Turmeric: Avocado Apple Salad with fresh Turmeric

If you haven’t tried fresh turmeric root yet, this is a delicious way to get a taste of its brilliant earthy, sweet flavor. The fat from the avocado will provide plenty of additional antioxidants and vitamin E to help ensure that you get the benefits of total absorption from the turmeric, with a little help from piperine in black pepper. Enjoy this delicious and simple fruit salad that’s bursting with fresh flavor and all the anti-inflammatory benefits of turmeric (and ginger too!). My favorite part of this is how elegantly the natural acidity from the citrus lemon balances out the sweetness from the apple and combines nicely with the warmth of the ginger. It’s a treat for your tastebuds!

Avocado Apple Salad with fresh Turmeric

Serves 2

1 apple, chopped into 1/2 inch cubes (for a keto-friendly substitute with one small Jerusalem artichoke)
1 avocado, chopped into 1/2 inch chunks
Squeeze of fresh lemon juice, or more to taste
1/2 teaspoon fresh turmeric root, or more to taste, grated
1/4 teaspoon fresh grated ginger root, grated
Dash of black pepper
1 tablespoon fresh cilantro, chopped, optional

Combine all ingredients in a medium-sized bowl and mix well. Serve immediately with optional cilantro.

Notes: I like to grate my fresh turmeric and ginger roots with a microplane, it produces finely grated pieces, perfect for a recipe like this. Be mindful as fresh turmeric root and dried powder can stain clothing.
