After allowing all ingredients to sit at room temperature for an hour, place the eggs, monk fruit, vanilla, and lemon juice in a high-speed blender and blend for 5 minutes. Then, simply microwave the coconut oil and butter for 45 seconds and add it into the egg mixture while whisking. 

Next, add the creamy MCT oil while whisking and then pour the contents into a storage container and freeze for at least 8 hours. When you’re ready to enjoy your keto ice cream, simply dish out your desired amount and enjoy!
