Chocolate Coconut Collagen Cookies Recipe

Ingredients

  • ½ cup coconut flour

  • ½ cup unsweetened grated coconut

  • 3 tablespoons OMI WellBeauty Collagen

  • ½ teaspoon baking soda

  • ¼ teaspoon baking powder

  • ¼ teaspoon sea salt

  • 6 tablespoons coconut oil, room temperature

  • ½ cup maple syrup or keto-friendly maple flavored syrup

  • 2 eggs, room temperature

  • 1 teaspoon vanilla extract

  • ½ cup chocolate chips or keto-friendly chocolate chips

Directions

  1. Preheat the oven to 325 degrees F. 

  2. In a bowl, whisk to combine the coconut flour, grated coconut, collagen, baking soda, baking powder, and salt. 

  3. In a separate bowl with an electric mixer, combine the coconut oil, sweetener, eggs, and vanilla. Beat until creamy. 

  4. Add the dry mixture to the wet mixture. Add the chocolate chips. Mix with a spatula until combined. Transfer to the refrigerator and chill for 5 minutes, or until the dough forms.

  5. Scoop about 2 tablespoons onto a baking sheet and slightly flatten. Bake for 15 minutes, or until golden brown.
