Good Fats: Salmonberry Coconut Smoothie with Collagen


I discovered how much I love Salmonberries on an exciting trip to Alaska. The native Inuit people make this delicious treat with them called, akutuq, which is like berry ice cream. It’s fantastically decadent yet brimming with nutrition (unlike traditional sugary ice cream!).

If you’re lucky enough to live on the West coast you can enjoy these Vitamin C rich brilliant orange-red gems too! If you live in other parts of the country, simply enjoy this “ice cream” smoothie with the closely related raspberry. The berries blend well with the smooth richness of coconut milk and polyphenol-rich mint. Baobab is a slightly citrus-sweet antioxidant fruit that will add a touch of natural sweetness. Salmonberry Coconut Smoothie with Collagen

Serves 2

1 cup salmonberries or raspberries
1.5 cups coconut milk
2 teaspoons omega 3 cod oil
1/4 cup coconut butter
1/2 cup chopped mint leaves, about 30 large leaves
1 teaspoon baobab
1 scoop of collagen 

Put all ingredients into a blender and blend on high for about 15 seconds until thoroughly mixed. Enjoy!
